Papaya Salad
This is a centuries old family recipe of the 3 Sisters (Pik, Apple, Bim) they grew up making this dish with their mom and selling it in their local village. If you can sell Papaya Salad to a Thai, you know its good. Fresh Papaya, shredded carrot, long green bean, lime juice, palm sugar all get combined some secret Thai spices and placed in a traditional Thai Khok (a large clay version of a mortar an bezel) until just the right mixture is obtained.
